Namaste.

Welcome to The NimbooDiaries.

(Nimboo means lime, an essential component of Indian gastronomy and culture)

I do Not Review, Rate, or Recommend.

I simply talk about food and everything related to it.

Through practice and travels, I explore food and culinary traditions.

This site is divided into two parts:

1. The Menu (under the Archives section) is where I describe interesting gastronomic phenomenon and trends. This covers recipes, facts, interviews, and everything in between. The idea is to present different perspectives on Indian food in general, from a global, and reasonably discerning, point of view.

I try to abstain from expressing personal opinions, but once in a while, it’s difficult to avoid.

2. In 2015, I had the opportunity to tick an item off my bucket list. I traveled around India on a self-styled ‘food pilgrimage’ of sorts. My experiences made me re-examine my understanding of Indian food in its entirety.

By the time you read this, I will have spent 60 days between 26 cities in search of what makes the food of 1.2 billion people as vibrant and kaleidoscopic as the country they live in.

Click on the Travelogue tab, based on my food trail spanning two months across India. Each eating establishment, home, place of worship, and person I encountered during this journey has presented me with nothing short of a culinary revelation.

The Travels tab contains an interactive map, however it is not available on mobile devices.

(I’m afraid I cant code as well as I cook)

About This Website

For longer than I can even remember, my life has been mostly about the one thing closest to my heart; Food.

My name is Sandeep, and I’ve been cooking since I was 11 years old, professionally since 18.

Today, I am an established entrepreneur with multiple restaurants and food related brands.

Cooking, to me, is the purest and most versatile form of expression. So it’s no surprise that I chose to make a living out of it, and have had the good fortune of having worked at some of the best restaurants in the World.

This website describes my work, travels and creative expression through various forms of media.

I hope readers learn something new every time they visit.

Thank you
